arugula

 Salad with arugula

 

ingredients:

10 grams of arugula leaves
1 tin of chickpeas
1 jar of pickled pumpkin
15 black olives
10 cherry tomatoes
balsamic vinegar
oil
salt
pepper
sugar
tarragon

Preparation:

1. Wash and dry the arugula
2. Drain the chickpeas, olives and pickled pumpkin
3. Cut cherry tomatoes into twos
4. Mix all the ingredients in a bowl
5. Add a pinch of salt and a pinch of sugar to the balsamic vinegar and stir to dissolve.
6. Then add pepper and 1/2 teaspoon tarragon
7. Pour 2 tablespoons of olive oil and mix until a homogeneous emulsion is formed
8. Pour the prepared sauce over the salad
