potatoes

Potato omelette

 

Ingredients:

  •      6 medium potatoes
  •      2 onions
  •      150 grams of green beans
  •      100 grams of Polish sausage
  •       2 red bell peppers
  •       6 eggs
  •       2 tablespoons of chopped parsley
  •       1 tablespoon of chopped dill
  •       salt
  •       pepper
  •       oil for frying  

 

Preparation:

 

  1. Peel the potatoes and cut into slices
  2. Cut the onions and sausage into cubes
  3. Heat approximately 5 tablespoons olive oil in a deep frying pan
  4. Sauté the onions, potatoes and sausage until the potatoes are soft
  5. Beans cook about 5 minutes in salted boiling water and drain
  6. Cut the peppers cut into strips
  7. Whisk the eggs in a bowl
  8. Add fried potatoes, onions, sausage, cooked beans and peppers
  9. Add the parsley and dill
  10. Season with salt and pepper
  11. Stir gently
  12. Heat some oil In a skillet
  13. Pour the egg mixture and fry for about 8 minutes
  14. Turn over and fry for another minute or two
  15. Sprinkle with parsley
  16. Serve hot Enjoy!
