Cold soup with new vegetables


1.5 litre of buttermilk
1.5 litre of kefir of yoghurt
2 garlic cloves
2 bunches of radishes
1 bunch of dill
3 garden cucumbers
a small bunch chives
2 eggs
50 ml of concentrated beetroot juice


1. Pour the buttermilk and kefir/yoghurt into a large pot
2. Rinse radishes thoroughly and cut them into small cubes, then lightly sprinkle with salt and let stand until they produce juice
3.  Wash and chop finely the chives and dill
4. Peel the cucumbers peel and cut into small cubes
5. Crush the garlic cloves
6. Add all the chopped vegetables to the pot of buttermilk and kefir/yoghurt
7. Mix thoroughly
8. Pour in the beetroot juice concentrate
9. Season with salt and pepper
10. Serve slightly chilled with hard-boiled egg cut into four
